Roast Spring Chicken with Garlic Sauce

Preparation time: 21 min.

Cooking time: 46 min.                           4 servings



2 spring chicken (2 lbs)

2 cloves garlic

8 small potatoes (1 lb)

1 egg yolk

2 cups oil (olive and sunflower)

½ cup chicken stock

salt, pepper

1 tablespoon chopped chive



Rub the inside of the chicken with salt and pepper. Oil them. Cook without covering on COMBI-HIGH for 16-18 minutes. Keep covered in the dish. While cooking, peel the potatoes and put them side by side in a dish. Add 3 tablespoons of water, salt and pepper. Cover and simmer1 the potatoes for 8 minutes on P-800 W. Turn them over when half cooked. Meanwhile prepare the garlic sauce. Crush the cloves of garlic. Add the egg yolk, salt and pepper. Pour the oil drop by drop while stirring in the same direction. Prepare some chicken stock with a cube. Add garlic sauce. Warm the chicken for 2 minutes on P-650 W if necessary. Put them on a dish with potatoes arranged around. Sprinkle with chive2. Serve the garlic sauce in a sauce boat.
